The volume of water that liverock displaces varies a great deal depending on the type of rock. You need to consider the density and porosity of the rock.

Also the volume of water sand displaces will depend on grain size with sugar fine sand displacing more than gravel.

The defaults for both of these are only rough guesses and should be treated as such.
